Mexican Lasagna

At our house, we love all things Mexican — Fajitas, Chimichangas and Quesadillas to name a few. When I was still in high school, my (now) 94-year old Memaw asked me to help her make a Mexican Lasagna. We love this dish! I made two casseroles back on Freezer Cooking Day. I put one in the freezer, and it turned out perfectly!!

I’m not great at following recipes for dishes like this, but I’m going to do my best to tell you how. Just know that you can make it however you want!

Mexican Lasagna

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can refried beans (I used a black/pinto bean mixture that I made in the crockpot.)
  • 1 pkg. taco seasoning
  • 1 1/2 cups salsa
  • 1 large (24 oz) carton cottage cheese
  • Shredded Cheddar cheese (lots of it!)
  • 6 corn tortillas

Preheat oven to 350 degrees. Brown ground beef with onion and garlic. Drain. Add beans, taco seasoning and 1 cup salsa to meat mixture and heat through. Add a little (1/4 cup?) water at this point if necessary.

Line 13 x 9 baking dish with 3 corn tortillas. Spread half of meat/bean mixture over tortillas. Evenly distribute half of cottage cheese over meat. Then add cheddar cheese. Repeat, but before adding last layer of cheese, sprinkle 1/2 cup of remaining salsa on cottage cheese. Then top with cheddar cheese. .

Bake for 30-45 minutes or until bubbly and cheese is melted.

Serve with taco toppings, a lettuce salad or roasted vegetables. Enjoy!

This looks great. My friend recently posted that she had made a Mexican lasagna and I really wanted a recipe to that. So, perfect.

My husband would LOVE this! When I make tacos, I usually make 2 pounds of meat (so we eat one, freeze the second for another meal) and this would be a great way to use it!

I want to try this but would like to know what you consider to be a large carton of cottage cheese? 16oz? They come in 3 sizes in my grocery store :)
